This one-day course is aimed at anyone who is involved in preparing and serving food to the general public, such as:

  • school meals
  • breakfast
  • after school clubs
  • restaurants, cafes and any other food eatery

Course content

The course covers basic food hygiene and consists of:

  • introduction to food safety
  • food safety hazards
  • principles of safe food storage
  • cooking
  • cleaning

A maximum of fifteen will be trained at this centre on each date. Separate dates and venue can also be arranged for a larger group.

The course is taught by the School Contracts Team, part of Ocelot Education Solutions.

Course time, dates and venue

Courses run from 9am to 5pm. Please email for future training dates.

Tea and coffee will be available through the day. Delegates will need to provide their own lunch or purchase at the on-site café.

The course will be held at Gun Wharf, Medway Council, Dock Road, Chatham ME4 4TR.


Charge is £75 + VAT per person and a cancellation fee may apply. Delegates will also be responsible for arranging cover.

To book a place for an employee, the employer must complete the Chartered Institute for Environmental Health (CIEH) candidate assessment needs form. The employee (course delegate) is asked to complete the pre-course questionnaire to confirm the place and return this information 10 days prior to the training.

If you require your test to be taken in a different language, then please let us know with your booking, which needs to be made at least 14 days in advance of the course date.

Please note that delegates will be required to pay a £30 cancellation fee if we are not informed within 48 hours of a course or if a candidate does not show up on the day.
